I am about to head into my final year of my degree and I am three courses away from my Newfoundland studies minor completion. There are no summer courses offered that are applicable, so I was wondering if there will be courses in the fall that can complete my minor?

This situation, unfortunately happens quite regularly and the only way to ensure that you will have enough courses to qualify for the minor is to PLAN well ahead of your final semester. Please speak to the coordinator ASAP upon starting your degree if a minor in NL studies interests you so they can work with you in creating a schedule.

Is there any way to do courses online?

Only courses that are designated as online can be done online.
